Breakfast is my favourite meal of the day, and it's just a lucky coincidence that it's the most important one at that. After a long night's sleep (and a relatively long fast), the body needs to be re-charged, so making sure you consume foods that will provide you with the right amount of energy first thing is key.
These gluten free, low sugar pancakes are a perfect way to start the day - and they're guilt free too! I like to have mine as a weekend treat :)
For the batter, you will need:
1 banana, mashed
2 free range eggs
A splash of dairy free milk
1 tbsp of buckwheat flour
1 tsp cinnamon
1 tsp chia seeds
1 tbsp unsweetened dessicated coconut
knob of organic butter
Firstly, whisk together the eggs, flour, chia seeds, cinnamon and milk, then mash the banana and add to the mix.
Once the batter is combined, add the coconut.
On a medium to high heat, add the knob of butter to a non-stick pan and use a ladle or tablespoon to add small amounts of the mixture to it.
Leave each pancake to cook for a couple of minutes until golden and then flip.
Serve with some fresh berries, a sprinkle of crushed walnuts and a dollop of organic coconut or goats milk yoghurt.
