GREEN IS GOOD...

I'm going to start off this series of recipes with one of my weekly (daily when I am organised enough) diet staples, the green juice. This versatile concoction can be drank any time of the day, and is a perfect way to squeeze in your daily dose of greens. Start off by choosing your base leafy green (kale and spinach both work well), and add in any other green veg that tickles your fancy, the more the better! You can choose to add some low-sugar fruit such as apple, pear or kiwi to make your juice more palatable if you are new to the juicing scene. Finally, mix in 2 cups of coconut water, a generous squeeze of lemon and a dash of freshly grated ginger and voila, green goodness at it's best. I usually have mine as a morning or mid-afternoon snack as a tall glass is filling enough to keep me going until my next meal. Don't feel restricted to use just green fruit and veg, try experimenting with some beetroot and carrot for another vibrant twist. BASIC GREEN JUICE: Makes 1-2 glasses 2 organic braeburn apples, de-seeded and chopped 1 large handful of spinach or kale (stems removed) 1/2 a large cucumber, chopped 2 cups of coconut water Juice of 1/2 a lemon Pinch of freshly grated ginger 2 Ice cubes Blend thoroughly for a couple of minutes.
